I'm back.

Okay, Okay, Okay. I know I haven't been blogging in awhile. Especially about some delicious food. I don't remember what was the last thing I made, but I made this awesome hor o'derves with my friend Jen. It's a stuffed mushroom. It was stuffed with crab risotto. Yum Yum.
I don't have a picture of it because I haven't uploaded it yet.
Stuffed Mushroom: (Serves 24)
Marinade for Mushroom
6 T Fresh Oregano (minced) ***
12T Extra Virgin Olive Oil
12 Cloves Garlic (minced)
Salt to taste
Pepper to taste
24 Mushroom.
Risotto:
1.5 C Arborio Rice
As needed Lobster base made into stock
3oz Butter
1/2 C Onions
1/2C Crab meat

To prepare the risotto, sweat the onions with the butter. Add the rice. Saute the rice a little.
Add stock, 1C at a time. Stir until rice absorbs the liquid. Keep adding until the rice is cooked and to your desired consistency. Best if it's less liquidy, It's easier to work with. Stir in the crab meat
Cool the Risotto until you can touch it with your bare hands
Marinade the mushrooms in the marinade
After the risotto is cooled, stuff it into the mushroom and bake it for 10mins at 375*F

***Note*** Dried oregano is okay but instead of  it being Tablespoons of dried oregano, make it 1 teaspoon.
